Ingredients:
1 package (about 20 oz) refrigerated or frozen cheese tortellini
2 tablespoons olive oil
3 cloves garlic, minced
1 can (14 oz) diced tomatoes, drained
1/2 cup sun-dried tomatoes, chopped
1/2 cup fresh basil leaves, chopped
1/2 cup grated Parmesan cheese
Salt and black pepper to taste
Red pepper flakes (optional, for heat)
Balsamic glaze for drizzling (optional)
Instructions:
Cook the tortellini according to the package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat.
Add minced garlic and sauté until fragrant, about 1 minute.
Stir in the diced tomatoes and sun-dried tomatoes. Cook for another 2-3 minutes.
Add the cooked tortellini to the skillet and toss to combine.
Stir in chopped basil and grated Parmesan cheese. Continue to cook until the cheese is melted and the tortellini is well coated.
